AURELIO GARCÍA
Originally from the small town of La Alberca de Záncara in Cuenca, surrounded by vineyards, Aurelio García has a vocational relationship with wine.
While his formation headed towards other worlds, Aurelio’s passion drew him towards wine.
After finishing his degree in Chemistry, he specialized in Food Science and Technology. There he discovered that he could dedicate himself and earn a living with what he was falling in love with: wine. He rejected a permanent position as a teacher and began working as a waiter in local wineries in the province of Cuenca.
That passion turned into professional growth in meteoric time and he soon became the head winemaker of the historic Valquejigoso winery in Madrid. He has been there for over 15 years, in which he has travelled the world, learning and investing in the latest techniques in vineyards and wineries.
This acquired knowledge caught the attention of various national and international projects, for which he was hired as a wine consultant at wineries such as Santa Elena and Origen (in Mexico), El Lagar de Isilla (Ribera del Duero), and Huerta de Carabaña (Madrid).
His rapid growth and professional progress were always accompanied by the irremediable concern of giving life to his own personal projects. This is how Mikaela Rubio arrived, his wife and life partner with whom he opened their own winery.
After several years combining these different businesses, the Aural project came Aurelio’s way, fully fitting in with his philosophy and way of understanding wine.
Aurelio García is obsessed with precision in wines and with enclosing the character of the vineyard within each bottle. How were the climatic conditions of a vintage, what special characteristics does a variety have, what unique details are there in the soil, etc… To achieve this precision, the vineyard must be worked in a very special way, interacting with the vineyard, which makes it stronger and be able to withstand a heat wave, a very rainy spring or the risk of fungal diseases. Once the vineyard is treated in this natural way, the work in the winery just has accompany the grape process without much intervention. The grape has all the balanced parameters, and this is how this precise wine is achieved. After several years combining these different businesses, the Aural project came Aurelio’s way, fully fitting in with his philosophy and way of understanding wine.
